St Paul’s Girl’s School is an independent day school for girls in Hammersmith, London. When executive head chef Gael Daval joined St Pauls fifteen years ago, he had two VarioCookingCenters installed based on his experiences of using them at his previous job at Charterhouse. The VarioCookingCenters were faster and more versatile than the bratt pans that St Paul’s had been using. Since then, the Varios have helped him, and his team deliver a diverse and healthy menu while helping to drive improvements in efficiency. The speed of cooking allows staff to produce a menu that meets a wide range of dietary requirements with no compromise on quality. Gael’s decades long journey with the RATIONAL Vario continues, as he recently added an iVario Pro 2-S to the kitchen to further increase output.
